One way I show love to my husband is by making his favorite banana bread. He praises it so profusely that it motivates me to make it often.  Really there isn’t anything special in the ingredients, but the one thing I do that seems to make it have a  really nice consistency,  is to blend all the wet ingredients including the bananas very well in my blender before mixing them in with the dry ingredients.  The  recipe is adapted from the Better Homes and Gardens New Cookbook.

3 ripe bananas
1 egg
1/4 c oil
3/4 c whole wheat flour
3/4 c white unbleached flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. cinnamon
3/4 c sugar ( I like to use a little less)
Pinch of salt

Bake at 350 degrees for 50 minutes. Makes one loaf.  My mom and dad like it with chopped up walnuts, but since my kids don’t like nuts, I usually leave them out. This recipe works well when tripled.  I have linked this recipe to GCC ‘s recipe swap.
