Even though I love Asian foods, I have always been intimidated trying to cook them. This recipe however could not be easier and is so yum it makes my mouth water just thinking about it. I first saw this recipe on tv years and years ago on a show called Epicurious and promptly went to their website and printed it. In fact I researched it and you can still find the original recipe there.
I have very slightly changed it and here is my version:
2 tsp of jarred chopped garlic
3 T light soy sauce
1 1/2 T rice vinegar
1/4 c Asian sesame oil
1/8 t red pepper flakes
1 tsp sugar
1/2 c salted roasted cashews
1/3 c water
Blend all ingredients in blender very well. I serve it at room temperature over angel hair pasta and sometimes add chunks of cooked chicken breast. It is supposed to serve 6 – 8, but we like lots of the sauce on our pasta, so for us it maybe serves 4! The ingredients are pricey but they usually last a while. I cannot stress how yummy it is!
