One of my favorite blogs to read this past year is I’m An Organizing Junkie.The author is a wonderful help at giving tips to make life more simple and organized. One of the first things she suggests is planning meals for the week. This eliminates the random mental confusion of wondering all week what to fix for dinner and if you have the ingredients on hand. Since I haven’t shopped specifically for this week yet, I scoured my freezer and pantry for meal ingedients that I already had on hand. Shockingly I found more than I anticipated. So I am excited to say this is what my family and I will be eating this week:
BBQ chicken salad with beans, corn, tomatoes, cheese & tortilla
strips
Quiche with ham and broccoli & sides of carrot sticks and fruit
Burritos with chicken, rice, lettuce, beans, cheese and tomato
Hamburgers and carrot sticks and fruit
Eggs, bisquits, bacon and fruit
Cheese pizza from the freezer doctored up with veggies or meat
