I am really starting to enjoy salads! I’ve always known they were good for you as long as you watch the fatty toppings, but I’ve struggled to eat them frequently. The last couple of weeks I have added them to my menu and now they are a favorite.
I skipped the ham and cabbage soup this past week, and made scrambled eggs instead of quiche, but other than that we followed our menu plan. Here is what we ate for dinner, and my estimated costs for my family of five:
Cobb Salad and Light Rolls
Romaine: $1.20
Tomatoes: $1.00
Turkey: $2.00
Eggs: $.60
Bacon: $1.00
Cheese: $.75
Homemade rolls: $1.00
Dressing: pennies
Total: $7.55
and
Hush Puppies
Ingredients for Hush Puppies: $1.00
Chicken: $6.86
Black Beans: $.89
Tortillas: $.30 (I only used 3)
Salsa: $.75
Cheese: $.75
Carrot Sticks: $.45
Total: $11.00
Eggs: $1.19
Rolls: free with doubled coupon and sale
Peaches: $1.50
Broccoli: $1.00
Total: $3.69
Chicken Soup and Homemade Light Rolls
Doctored up chicken soup: $4.40
Homemade Light Rolls: $1.00
Total: $5.40
Chicken: $4.17
Rice: $2.00
Tortillas: $.75
Salad: $1.80
Salsa: $.75
Refried Beans: $.25 (on sale and doubled coupon)
Total: $9.17
So the estimated total for these five meals for my family was: $36.81. This is so much cheaper than eating out!

Quiche and Baked Peanut Butter Oatmeal
Homemade Pizza and raw veggies
Chicken Pot Pie
Pasta with Meat Sauce, garlic bread, vegetable and salad
