Last week when I was searching for a recipe,  I found this box cake mix cookies recipe on Cooks.com, and in one of the comments under it, someone said they used carrot cake mix all the time, and it was good.  So of course I had to try it.

This recipe is as simple as it gets.

1 box of carrot cake mix
2 eggs
1/2 cup of oil

Now I did not add nuts or raisins because my kids wouldn’t eat them,  but if you like them,  I bet they would be delicious added to the batter.
I mixed it by hand and dropped by tablespoonfuls onto a greased cookie sheet, and then baked at 350 degrees for about 10 minutes.  It makes 24 cookies.

 

After they cooled down, I frosted them with cream cheese frosting. If you like nuts, you could sprinkle some crushed or chopped on top of the frosting for decoration.
The cake mix cookies  have a nice texture, and really your options are limitless. I have even frozen them (baked but unfrosted) and defrosted or microwaved them when I had a craving.   Enjoy!

  3. This looks delicious!! I love Carrot Cake, but my husband thinks it blasphemy to put vegetables in a dessert, so I don’t get to eat it very often. ;)
    Have you tried freezing them, or do they not last long enough?! ;) Maybe I can make myself a batch and freeze the ones I don’t eat… :)
