Raspberry treats are a favorite at our house. This cupcake is a yummy easy way to curb a fruity sweet tooth.
Here is what you need:
French Vanilla cake mix
16 oz. Vanilla frosting
12 oz. Seedless Raspberry Jam
A cake decorating bag with tip
Make the cake mix according to box directions or use your own recipe. The boxed mix makes 24 cupcakes.
I used a measuring cup and still had trouble making them all the same size!
Set aside 1/4 cup of the seedless raspberry jam. Warm the rest in the microwave, and stir to make soft.
Poke a hole in the center of each cupcake being careful not to go all the way through. I used the stem of a spoon.
Put the softened jam in your cake decorating bag with a tip, insert into the cupcake, and squeeze out about a  teaspoonful of jam into each cupcake.
Scrape off any excess on top.
Mix the leftover 1/4 cup of jam with the 16 oz of frosting.
I used my Kitchen Aid to mix the two, and the frosting mixture got a little soft, so I put it in the refrigerator for a little while to firm up a bit.  Then I frosted my cupcakes. The frosting consistency was slightly softer than regular butter cream frosting, but it was delicious!

and some with a spatula.  I had some pretty liners for my picture, but forgot about them till the cupcakes were all eaten!

  7. YUM! What a fast cupcake! I have filled chocolate cupcakes with raspberry pie filling and homemade cream cheese frosting…they turned out so yummy! I’ll have to try it with vanilla cupcakes.
