I am loving this little cookbook,  The Best 1001 Short, Easy Recipes. The recipes in it are just what the title states, short and easy.  Anything with lemonade seems to be popular right now, and lo and behold this little cookbook had a recipe for lemonade chicken.

Can I just say, it is so hard to make a non breaded chicken breast look pretty on camera, and please excuse the fork marks.

Now that I got that off my chest, here is what you need to make this nice and lemony lemonade chicken:

6 boneless skinless thawed chicken breasts
1 can of frozen lemonade, thawed (6 ounces)
1/3 cup of soy sauce (I used light soy sauce)
1 teaspoon of garlic powder

Put your thawed chicken breasts in a greased 9×13 casserole dish.

Mix the thawed lemonade concentrate, soy sauce and garlic powder, and then pour over the chicken.

 

Cover with foil and bake in a 350 degree oven for 45 minutes. Then remove the foil, and baste your chicken with the juices, and bake 10 more minutes without the foil.

You are ready to serve with your favorite sides!

  2. This sounds really good. Lemon chicken is my favorite.

    When I saw that first picture of the raw chicken I thought you had it right on your cooktop. LOL! Your dish was so clear.

    Yes I agree taking pictures of chicken is hard. I try to take it at eye level.

  9. Please help me with one question on ingredients. :) …. It says 6 oz of frozen lemonade? The only size I found in the grocery store was a 12-oz can. So.. I really only should use half of the 12-oz can? Thank you in advance! my best!
