Some evenings are just very short on time as far as dinner goes, and I love keeping ingredients on hand for just such times when I need a fast substitute for my planned meal that may require more time than I have. This navy bean soup is perfect for those evenings.

The recipe is from a great little cookbook called 1001 Community Recipes, and here is what you need:
3 15oz. cans of navy beans
1 cup of ham, chopped in bite size pieces
1 onion, chopped finely
1/2 teaspoon of garlic powder
1 cup of water

Combine beans (and their liquid) with all the other ingredients in a sauce pan.

Stir and bring soup to a boil, then reduce heat and simmer till onion is cooked “tender-crisp” (maybe 10 minutes).

Then you are ready to serve with some hot cornbread or a crusty hearty bread!
