This light, fluffy, and tangy cake is made with just two pantry staples — 1 angel food cake mix and 1 can of lemon pie filling. It’s like sunshine in every bite! With an angel food cake mix that already has the egg whites in the mix, no eggs, oil, or water are needed, so it can’t get any more simple than this.  This cake rises beautifully on its own and comes out fluffy and moist with a slightly golden crust. Perfect for spring, summer gatherings, or when you just want something sweet and effortless without tons of calories.

Ingredients

  • 1 box (16 oz) angel food cake mix (must say “just add water”)

  • 1 can (21 oz) lemon pie filling

  • powdered sugar optional but pretty

, 2 Ingredient Lemon Angel Food Cake, Joyful Homemaking

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large mixing bowl, combine the entire box of angel food cake mix with the can of lemon pie filling.

    • Do not add water or follow the box directions — just mix the two ingredients.

  3. Stir until fully combined. The batter will be fluffy and airy.

  4. Pour into a 9×13-inch baking dish. Now a lot of angel food cake recipes say there’s no need to grease the pan, but I always do, otherwise my cake seems to stick to the pan.

  5. Bake for 25–30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

  6. Let cool completely. Serve as-is or with a dusting of powdered sugar, fresh berries, or a dollop of whipped cream or even a side of ice-cream or sherbert!
