Yummy Peanut Butter Popcorn

This is another one of my mom’s recipes! She has the best ones. I don’t know the original source, but the recipe is simple and delicious.

INGREDIENTS and DIRECTIONS:

  • 3 Quarts of popped popcorn–set aside in a large bowl–(I use 94% fat free microwave popcorn, about 2 1/2 bags of the 77 grams size)
  • SCREEN FOR UNPOPPED KERNELS! (They are hard on the teeth)
  • Then add to a saucepan:
  • 1 cup of sugar
  • 1/2 cup of honey
  • 1/2 cup of corn syrup
  • Bring to a boil these three ingredients, and boil hard for two minutes.
  • Remove from stove.

Add in:

1 cup of peanut butter

1 tsp. of vanilla

Then spread it out on sheets of waxed paper or foil to cool down.

That’s it! So easy and so yummy!

Ingredients

  • 1/2 cup of corn syrup
  • 1 cup of peanut butter
  • 1 tsp. of vanilla
  • Optional additions: 1 1/2 cups of peanuts or almonds

Instructions

  • Set popped popcorn aside in a large bowl.
  • SCREEN FOR UNPOPPED KERNELS! (They are hard on the teeth)
  • Then add to a saucepan: sugar, honey and corn syrup.
  • Bring to a boil these three ingredients, and boil hard for two minutes.
  • Remove from stove.
  • Add in: peanut butter and vanilla.
  • Stir till blended and smooth.
  • Pour over popcorn and stir till all coated.
  • Add nuts if desired.
  • Then spread it out on sheets of waxed paper or foil to cool down.
 Optional additions: 1 1/2 cups of peanuts or almonds.

  8. I grew up on this recipe! Last week the kids and I found really cute popcorn bags at Michaels and decided to make this and deliver it to neighbors. So yummy!

  9. The first part sounds like No Bake Cookies. I wounder if you could modify it with the addition of cocoa powder and then get that same taste. You could even make the peanut butter corn, and then the chocolate corn, and mix them together… hmmm… might have to try that!
