Menu Plan for the Week of August 22

Hey there! I am in a scramble to get all my paperwork together for the homeschool  coordinator for our county. We have to send in our test results from last year, and a complete plan of what each child will be studying for this year, before we get our “approval” letter for our children to be homeschooled for the current school year.  I am curious as to what others’ requirements are in other parts of the country and world?  Fortunately, meal planning helps keep some of the chaos of this busy time of year at bay.
Here is my plan for this week:

Breakfast Options: (Any combination of the following)
French toast
Cereal
Fruit
Waffles
Toast
Eggs
Oatmeal
Poptarts
Egg whites and spinach (hubby’s choice)
Pancakes

Lunch Options:
(We like to add fruit and/or carrots to any of these “entrees”)
Pasta  (My kids love it)
Ravioli
Macaroni and cheese
Vegetarian corn dogs
Vegetarian hamburgers
Hot dogs
Chicken,  turkey or ham sandwiches
Graham crackers and milk
English muffins
Peanut butter and fluff sandwiches
Whole wheat toast
Soup
Yogurt or cheese sticks, crackers
Leftovers from dinner

Dinners:

Sundried Tomato Pesto Pasta with Chicken
(Not the best picture, but it’s delicious)
I cheat and use the bottled pesto from the grocery, and just mix it in with my pasta and cooked chicken breast.

  1. Here in Michigan we are free to homeschool as we see fit before God (so far). That was a hard-fought battle just as we were beginning this journey and we are very grateful to those who suffered for this right.
    Your menu ideas are inspiring me to get to work on a better menu that just flying by the seat of my pant. Thanks.
