Menu Plan for the Week of December 19th

Next Sunday is Christmas! I am so looking forward to this week as my hubby has some time off from work. He works long hours, and has been out of state a couple of times in the last 2 weeks, so we are going to savor his time off. Even though this season tends to be full of busyness, we can’t forget that this is a time to celebrate our dear Savior’s birth!
On the menu this week is a couple of new recipes that I have tried recently, and they are worth trying!
One is for macaroni and cheese, and the other is an easy but delicious chicken and dumpling casserole.
So here we go.

Breakfast Options:
(Any combination of the following)
French toast
Cereal
Fruit
Waffles
Toast
Eggs
Oatmeal
Poptarts
Egg whites and spinach (hubby’s choice)
Pancakes
English muffins
Muffins

Lunch Options:
(We like to add fruit and/or carrots to any of these “entrees”)
Pasta  (My kids love it)
Ravioli
Macaroni and cheese
Vegetarian corn dogs
Vegetarian hamburgers
Hot dogs
Chicken,  turkey or ham sandwiches
Graham crackers and milk
English muffins
Peanut butter and fluff sandwiches
Whole wheat toast
Soup
Yogurt or cheese sticks, crackers
Leftovers from dinner

Dinner:

Chicken and dumpling casserole
It doesn’t take a great picture, but it is comfort food at it’s finest, and if you like you can add some mixed vegetables to the recipe.
Grocery list:  Chicken, chicken broth, butter, self-rising flour, milk, cream of chicken soup

 Mexican Lasagna and salad
Grocery list: Lasagna noodles, ground beef or turkey, refried beans, green chiles, taco seasoning, salsa, Monterey Jack cheese, sour cream, olives, green onions, tomato and salad fixings

Creamy macaroni and cheese and broccoli
(I didn’t use the Gruyere cheese in this recipe, I just used extra cheddar and Swiss)
Grocery list: Macaroni noodles, bread crumbs, milk, flour, cheddar cheese, Swiss cheese, Gruyere cheese and broccoli

Taco soup
Grocery list: Ground turkey or beef, kidney beans, pinto beans, corn, canned diced tomatoes, can of tomatoes and chiles, taco seasoning, ranch dressing packet, cheddar cheese and sour cream

Hamburgers, smiley potatoes, carrots and fruit
Grocery list: Hamburgers, buns, smiley potatoes, carrots and strawberries

Fruit salad
Grocery list: Biscuits, veggie sausages, cheddar cheese, eggs, assorted fruit for salad

Christmas dinner will be a shared effort amongst extended family.

  2. YUM! I want some of that Mac and Cheese now! I love those little lunch trays. For some reason they help my kids eat more??? Who knows… but it works!
