Chocolate and Butterscotch Caramel Pecan Bars

These bars are so scrumptious with layers of shortbread, caramel, pecans, chocolate and butterscotch!  They happen to be very easy to make too!  They can also serve a bunch, because they’re rich, and so it only takes a small square to totally satisfy your sweet tooth or chocolate fix.  🙂

 The nice thing about this recipe is that it contains items you commonly have already in your pantry, except maybe the pecans. As a child I did not like any nuts except peanuts, and now as an adult I realize what I was missing. The pecans in this recipe add so much flavor and texture! Here is what you need to make these luscious bars:
 
For the crust:
2 c flour
3/4 c brown sugar, packed
1/2 c softened butter
1 1/2 c pecan halves

 In electric mixer, beat the flour, sugar and butter until crumbly, and then pat down firmly in the bottom of a greased 13×9 inch pan.
 Sprinkle the pecans over the top of the crust.
 
Caramel Middle
1 c butter
3/4 c brown sugar, packed
Cook brown sugar and butter on medium heat, while stirring until it bubbles for a minute or so, and then pour over crust.
Bake for 20 minutes at 350 degrees.
Glaze
1 cup chocolate chips
1/3 c butterscotch chips

As soon as you take it out of the oven sprinkle chips over the top.

 Let them melt for 3 minutes, and then take a butter knife or spatula and flatten out and swirl the chips a little to spread them out and make a pretty design. Cool completely (I put mine in the refrigerator for a little while), cut into bars and indulge!

The original recipe called for for just chocolate chips, but I substituted a portion with butterscotch chips which gave these bars a unique flavor.

  2. HELP! I made these but must have done something wrong as my butter separated from the brown sugar in the oven. Did I not let it bubble long enough? What did I do wrong?

    1. Hey Penny, When I took my bars out of the oven, I noticed butter on the top as well, but after I spread the chips, and chilled it, it must have absorbed because they were fine then.
