Minus the Meat Monday

I’ve tried going without animal products a couple of times in my life, but I never lasted more than a few months at a time. I still have a desire though, to add more meatless meals to my family’s diet. I think it’s good for our health and our budget.  My hubby likes to have lots of protein, and my two youngest are finicky, so it can be challenging for me to come up with pleasing meatless meal ideas, but with so many resources these days, I think it will be do-able.
I would love for this to be a regular Monday posting, with a new and tasty vegetarian dinner idea each week, but we’ll see if I can keep up that pace.

Lemon Ricotta Pasta with Red Peppers and Spinach

This dish has ricotta cheese, red peppers, garlic, lemon and spinach mixed with fettuccine noodles and crushed red pepper flakes, and I have to say, it was a hit at our house! My oldest was scraping the pan to get every last bit!       I agree, my kids could eat it every day, and if I’m serving something they don’t like, I always have cooked pasta in the refrigerator as an option! 🙂

    I’ve also gone meatless, but now we’re gluten-free due to my daughter’s allergy. I will try this with corn pasta. Last time we went all meatless, my kids got weird symptoms like muscle aches and moodiness and trouble sleeping, I took them to the doctor and their blood tests came back with very low magnesium. The doc said to put lean meat back in their diet because it had a high bio-available supply of minerals. Too bad we couldn’t continue meatless, but I still do it occasionally.

      That’s good to know about the mineral supply! I just recently bought some ingredients to try some gluten free recipes to see if we felt better. Have you noticed a difference since cooking gluten free?
