Hashbrown Potato Casserole

Just about every family get together we have includes this yummy, cheesy hashbrown potato casserole as a side dish, and there are never any leftovers! I usually double the recipe, since there are over 20 of us in total.

INGREDIENTS:

  • 26 ounce bag frozen shredded hashbrowns
  • 1 teaspoon of salt (optional: 1/4 teaspoon pepper)
  • One 10 1/2 ounce can cream of chicken soup
  • 2 cups sharp Cheddar cheese
  • 1 Tablespoon dry minced onion
  • 1 3/4 cups french fried onions, divided
  • 16 ounces sour cream

DIRECTIONS:

In a large bowl, mix everything together well, except 3/4 cup of the french fried onions. Pour mixture into a greased 9×13 baking dish, and then top the casserole with the reserved 3/4 cup of french fried onions.
Bake in a preheated 350 degree oven for 45 minutes.

hashbrown casserole, Hashbrown Potato Casserole, Joyful HomemakingIf you’d like to make this a main dish instead of just a side dish, I occasionally like to add 2 cups of ham (cooked and chopped into bite size pieces) to the mixture before baking.  It’s a delicious add-in to the recipe!  Another delicious alternative to topping the casserole with the french fried onions, is to mix 1/2 cup of melted butter and 2 cups crushed cornflakes together, and top the casserole with it before baking, either way is scrumptious!

  1. When you double the recipe, do you make two pans of it or do you double it in a larger pan? If you use a larger pan, how long do you bake it? We will have around 20 for Easter, so I may need to double it.
