Happy Monday! I hope you had a wonderful Christmas enjoying family and friends. I had 23 in my home for Christmas, and feel extremely blessed and grateful for each one. We were all processing a serious diagnosis of a dear loved one, so there were times of tears, and a sense of urgency to savor the moments, and to count each one precious. It’s a reminder too, that you never know what difficult journey those around you may be on, and to treat them with kindness.
Part of the way we love our families is with food 😉 …So here are some ideas to help you feed your family this week!
Baked Eggs, Ham and Cheese Casserole
Grocery list: Eggs, ham, Cheddar cheese, bread, milk, onion and mustard
This type of casserole is a staple in my family. When my parents still lived close by, my brother, sister and I, and our families would have lunch at our parents’ house after church on Sundays, and an egg, ham and cheese casserole was one of our favorites! You can double or triple it to serve a crowd.
Grilled Cheese Breakfast Sandwich
Grocery list: Bread, Colby Jack cheese slices, bacon and eggs
Grocery list: Fettuccini noodles, cream, bacon, butter, eggs and Parmesan cheese
This is hands down the soup I make most often, which everyone loves, AND it’s an absolute cinch to make! If you use canned chicken breast, you can keep all the canned ingredients on hand in your pantry!
Chicken, Black Bean & Salsa Soup
Grocery list: Chicken, black beans, salsa, chicken broth, corn and rice
Pepperoni and cheese stromboli and raw veggies
Grocery list: Dough ingredients, pepperoni, mozzarella cheese and raw veggies
Baked Chicken & Spinach Egg Rolls
Grocery list: Egg roll wraps, chicken, black beans, spinach, corn, green chilies, green onions and cilantro
A healthier way to prepare egg rolls, but they taste delicious!
My dessert choice of the week are these Nutella “Cinnamon” Rolls, which are rich, flakey and slightly sweet, and make a nice end to a meal!
