Delicious and Easy Dinner Ideas for the Week

A new week means a new menu plan in these parts, but I must admit my heart is heavy this week for the people of West Virginia who were just bombarded this past week with flooding.  My parents live in one of the hardest hit counties, but they were fortunate that they live on a hill, and only their garage and breezeway were affected by the water and mud, and my parents are safe and sound, which is most important.

These pictures are of their front yard which leads down to the river, which rose 22 feet.

24 people so far have lost their lives in the flooding, so please be in prayer for all of those hurting families.

  1. Wow the Southwestern Black Bean salad looks so yummy! I just made some Three Bean Salad today too. Do you normally eat if in a wrap or maybe with chips or crackers? I looks good by itself just wondering how its normally served. I will definitely try out your recipe!
    Thanks!
