Menu Plan for the Week

Wow, it’s been two Mondays since I’ve posted a menu plan…life is full, and full of ups and downs and downright scary times.  With all that is going on in our nation and in our world,  I have to remind myself, that God is still seated on His throne; He sees all and is ultimately over all, and He hears and even desires my prayers.

For some wonderful news though, our oldest son got married last week, to a sweet and beautiful young lady.  It was a happy, busy, emotional time for our family.  Since he’s been going to college just a few miles from home, he’s also “leaving home” for the first time, and his brother and sister (all right, and mom and dad) are having a bit of an emotional time with that too.

We had lots of extended family visiting for a few days, and so we have been quite busy.  I’ve also been fighting a nasty ear infection for a month, along with a fever, so things have been challenging.
My mom’s precious sister passed away unexpectedly also, so it has been a really tender time for the family, and then you turn on the news, and it seems the world is falling apart.  With all the heartache going on in our country and the world,  a book that has been so helpful lately, and which we’ve just finished working through in Sunday School, is Trusting God: Even When Life Hurts by Jerry Bridges.
I encourage you to read it if you’re struggling with hurts and wondering where God is, why He allows things to happen, and how to process it all and keep functioning.

Now the “troops” must still be fed, and I am so thankful that that’s currently one thing we don’t have to fret about, so here is my new meal plan for the week.

Asian Chicken Salad
Grocery list:  Cooked cubed chicken, lettuce, coleslaw mix, tortilla strips, sliced almonds and your favorite Asian dressing

Baked Eggs, Ham and Cheese Casserole
Grocery list: Eggs, ham, Cheddar cheese, bread, milk, onion and mustard

Pancake Bar
Grocery list:  Pancake ingredients, fruit, bacon and eggs

Southwestern chicken salad
Grocery list:  Romaine lettuce, tomatoes, corn, black beans, cheddar cheese, chicken breast, hard boiled eggs, dressing and any extras

Easy Turkey Meatloaf
Grocery list:  Ground turkey, onion, garlic, bread crumbs, BBQ sauce, Worcestershire sauce and egg

My dessert choice for the week are these simple but scrumptious Mini Boston Creme Pies.

They are my hubby’s favorite, and perfect for a hot summer evening!
