Happy new week! In anticipation of some cooler temps, this week’s menu plan is based on CASSEROLES. We’re a split family when it comes to casseroles… I was raised on them and thoroughly enjoy them, but my hubby tends to prefer a slab of meat with the veggies on the side. However with these recipes, I’ve been tempting him over to my side. The nice thing about all of these recipes too, is that they taste delicious even when using lower fat versions of the ingredients.

Cheesy Chicken & Pasta Casserole
