Dinner Menu Plan for the Week

Welcome to another week of dinner menu planning!  Last week was a super busy week here.  My hubby received an opportunity to go to the first game of the World Series, between the Cleveland Indians and the Chicago Cubs, and I was so tickled for him.  He had a great time, and made a memory.  He also had a business dinner another evening, and when he does, the kids and I tend to go simpler for dinner, with something like scrambled eggs and toast, or we break down and order pizza.  We usually turn it into a movie night, with dinner in front of the TV instead of at the table, which makes it more fun for us, since we’re missing “dad” for the evening.
Do you tend to do anything different for your dinner menu plan with the kids, when your hubby isn’t home for the evening?

Baked Tacos
Grocery list:  Ground beef, taco shells, taco seasoning, cheddar cheese, tomatoes and lettuce

Crockpot Bacon & Ranch Chicken and Pasta
Grocery list:  Chicken, bacon, garlic, dry ranch salad dressing mix, cream of chicken soup, sour cream and pasta

 Pumpkin Pancakes
Grocery list: Pumpkin, flour, eggs, buttermilk, oil, vanilla, brown sugar, baking soda, baking powder and pumpkin pie spice

Baked Chili Cheese Dogs
Grocery list:  Hot dogs, hot dog buns, chili and cheddar cheese

Taco Casserole
Grocery list:  Ground beef, tomato sauce, refried beans, taco seasoning, tortilla chips and cheddar cheese

Hashbrown Potato Casserole with Ham
Grocery list:  Hashbrowns, cream of chicken soup, cheddar cheese, onions, french fried onions and sour cream

Finally, my dessert choice for the week has to be these scrumptious Pumpkin Spice Cupcakes!

These cupcakes start with a boxed spice cake, and you add just a few ingredients, so they’re really easy, and yet they get rave reviews!  🙂
