I hope you’ve had a nice Thanksgiving weekend!  Ours was quiet, but that wasn’t a bad thing.  🙂  Of course, we ate too much pie and stuffing, but it was soooooo good.  We also put our Christmas tree up, did a little Christmas shopping, and had some family time with our newly married son and his bride.  So it was a perfect holiday to me!

Loaded Baked Mashed Potatoes from Home Cooking Memories
My hubby picked up 20 POUNDS of potatoes the day before Thanksgiving, for me to make mashed potatoes for 4, so I have about 15 pounds of potatoes left!  This looks like a delicious way to use some of them up!

Quiche with a Hashbrown Crust
Grocery list:  Hash-browns, butter, eggs, half-n-half, onion, bacon and Cheddar cheese
If I shred my own hashbrowns, I can use up some more of my leftover potatoes!  🙂

This is hands down the soup I make most often, which everyone loves, AND it’s an absolute cinch to make!  If you use canned chicken breast, you can keep all the canned ingredients on hand in your pantry!
Chicken, Black Bean & Salsa Soup
Grocery list:  Chicken, black beans, salsa, chicken broth, corn and rice

My dessert choice for the week are these super easy Reese’s Puffs Peanut Butter Balls.
