Menu Plan for the Week

It’s a new and pretty big week, with the presidential election on Tuesday.  I’ll be glad when all the campaign commercials and political phone calls are done with for now!  I invited my oldest son and his bride over for dinner on election night, and I’m going to have a Southwestern buffet with nacho, burrito and taco fixings.  It’s one of our favorite “family gathering” meals!  🙂  I like to cook up my chicken and ground beef ahead of time, in the crockpot (separately), freeze it in meal size portions, and then just thaw and warm it up, when I’m ready for it.  It makes for quick  and easy meals.

Here are my dinner ideas for this busy week:

Lasagna Soup
Grocery list:  Pasta, diced tomatoes, ground beef, pasta sauce, Italian seasoning, beef broth, Parmesan and Mozzarella cheese

Layered Taco Dip
Grocery list:  Ground beef, taco seasoning, sour cream, cream cheese, cheddar cheese, lettuce, tomatoes, tomato sauce and tortilla chips

Copycat Berry Almond Chicken Salad
Grocery list:  Mixed greens, strawberries, blueberries, Asiago cheese, almonds, grilled chicken breast and raspberry vinaigrette

Homemade Beefaroni with Sundried Tomatoes
Grocery list:  Pasta or elbow macaroni, ground beef, sundried tomatoes, onion, garlic, tomato sauce and basil

Cashew Sesame Noodles
Grocery list:  Angel hair pasta, garlic, soy sauce, rice vinegar, sesame oil, red pepper flakes and cashews

My dessert choice for this week is hot cocoa with this cute little “soaking” marshmallow man.

  1. Wow, I sort of want to just scrap my meal plan for the week and steal your plan. It all looks so good! I love layered taco dip. I guess it’s a good thing I already did my grocery shopping 🙂 Hope you have a wonderful week!
