Quick Dinner Ideas

It’s a new week to nourish and nurture our family with food. 🙂
Since we’re trying to really save money by not eating out too often, I’ve found myself buying a few convenience foods for evenings when I’d rather do something else besides cooking.  We tried some store bought, already-prepared frozen enchiladas this week, and while they were “ok,” I decided I could make them so much tastier, and with lots more chicken.
Do you feel that way when you try “prepared” foods from the grocery… that you could make it a whole lot better?  It puts me in the mood to do some “freezer cooking,” to stock up with homemade prepared foods for the busy evenings, instead of frozen food from the grocery!

Fast and Easy Chicken and Rice Soup
If you have leftover cooked chicken or canned chicken available, this soup is amazingly fast!

Cobb Salad
Grocery list: Romaine lettuce, grape tomatoes, cooked chicken or turkey, avocado, bacon, blue cheese and dressing

Reuben Sandwich
Grocery list:  Rye bread, corned beef, Swiss Cheese, Sauerkraut and Thousand Island dressing

Cinnamon Pancakes
Grocery list:  Pancake ingredients and cinnamon chips

My dessert choice for this week is these Oatmeal Chocolate Peanut Butter Bars!

These delicious bars have a bottom oatmeal cookie layer, topped with melted chocolate chips, and finished off with peanut butter frosting!

  1. Hopping over from MPM…oh my! Those oatmeal cookie bars look divine! Think I will give them a go this week! The pancakes look delicious too! My go to when I don’t want to cook but still want to feed my family good food? The pressure cooker!

  2. Wow! All of this looks so yummy! I think I am going to try a Pumpkin Cream Pie this week for dessert. Have a great one! I am loving this! It is my first time posting to MPM and I am very excited and it and all of the wonderful ideas!
