Family Dinner Ideas for the Week

I hope this new week finds you well.  I don’t remember cooking much last week.  😛   My hubby worked late a few times, and when it’s just the kids and I, I tend to go with simple quick dinners.  Sandwiches, eggs, pasta, or something I can throw in the microwave… I have hopes that this week, I’ll do a little more hearty cooking and baking.  I like to keep some baked sweet potatoes on hand to either snack on, or add to a meal, and I also prefer to keep some sort of healthier muffins or banana bread available for my family.  I’ve used the same banana bread recipe for years and years!  It’s scrumptious!
