Leftover Beef Roast into a Cheesy BBQ Beef Sandwich

Last Saturday afternoon, my hubby and I were sitting outside enjoying the cooler temps and discussing what to do for dinner.  Now I must admit, that often on a late Saturday afternoon we’re both usually feeling tired and a bit lazy, and we cave and go out and grab some fast food for dinner.  This time though, my hubby was talking about how good the beef roast was that I had made the day before, and he wondered how it would taste on a sandwich with some cheese.   I’ve never added cheese to beef roast before, but we lazily “googled” it, and lo and behold, it’s a THING.

I got so excited, I got up immediately, and went inside to make us some SANDWICHES!

I warmed up my leftover beef roast in a frying pan while breaking it up from the big pieces into more of a shredded beef,

and then I added a bunch of good bottled barbeque sauce. No exact measurements here!

After a few stirs combining all the sauce and meat well, and when it was steaming hot, I scooped the mixture onto some buns.

I then topped the sandwiches with sharp cheddar cheese slices (our favorite).

On the sandwiches where the cheese didn’t melt enough for my satisfaction, I microwaved them for a few seconds, till the cheese was nice and gooey.  We quickly DEVOURED this new delicacy, which minutes ago had been foreign to us.  They were SO. GOOD.  Way better than takeout on a late Saturday afternoon!

It was easy and quick, and my husband didn’t stop raving about them for hours.
I highly recommend this scrumptious sandwich next time you have leftover pot roast, or even if you want to make a roast just for these sandwiches!
