Breakfast Cookies

Cookies for breakfast? Umm, yes, please!  Do you get tired of having the same things for breakfast over and over?  Well, here’s a new recipe for you…Cranberry Oatmeal Peanut Butter Cookies or I’m calling them “Breakfast Cookies.”  You’ve got oats, peanut butter and fruit in them, so why not have cookies for breakfast?!

To make cookies that I consider healthy enough for breakfast, I use stone ground whole grain flour, natural peanut butter, whole grain oats and organic dried cranberries.

INGREDIENTS:

  • 1/2 cup butter (I like Smart Balance)
  • 1/2 cup peanut butter
  • 1/3 cup white sugar
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1 large or extra large egg
  • 1/2 teaspoon vanilla
  • 1 cup whole grain flour
  • 1 cup quick or regular rolled oats
  • 1/4 cup dried cranberries

Cream butter and peanut butter with mixer, then add sugars and baking soda.   Finally add the egg and vanilla,  and blend together.

Stir together the flour and oats, then add to the blended mixture, and stir everything till combined.

Spoon rounded teaspoonfuls about 2 inches apart on a large greased cookie sheet (Or use baking parchment). Flatten a tiny bit with the back of a spoon because these cookies don’t spread out a whole lot.  Bake for about 10 minutes in a preheated 375 degree oven.
Makes around 2 dozen.
