Breakfast Cookies

When it comes to breakfast, there are no hard and fast rules for what can and cannot be eaten! That's where these fruit and oatmeal cookies come in! Packed with fiber-rich oats, peanut butter and fruit, these cookies offer a tasty and convenient way to start your day.

Ingredients

  • 1/2 cup butter I like Smart Balance
  • 1/2 cup peanut butter
  • 1/3 cup white sugar
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1 large or extra large egg
  • 1/2 teaspoon vanilla
  • 1 cup whole grain flour
  • 1 cup quick or regular rolled oats
  • 1/4 cup dried cranberries

Instructions

  • Cream butter and peanut butter with mixer, then add sugars and baking soda. Finally add the egg and vanilla, and blend together.
  • Stir together the flour and oats, then add to the blended mixture, and stir everything till combined.
  • Spoon rounded teaspoonfuls about 2 inches apart on a large greased cookie sheet (Or use baking parchment). Flatten a tiny bit with the back of a spoon because these cookies don’t spread a whole lot. Bake for about 10 minutes in a preheated 375 degree oven.
