Heat up a non-stick pan over medium low heat, and if you like, melt a little butter to coat the outside of the tortillas, or spray your pan with cooking spray.
Lay one tortilla in your pan and add your cheese, chicken and bacon, and any other desired ingredients. Lay another tortilla on top of ingredients. Then I like to put a lid on the pan to help hold in the heat, and get the cheese nice and melted, so everything kind of sticks together with the cheese. When the bottom tortilla starts to get golden and crispy, gently flip with a large pancake turner/spatula, and cook till the other side gets golden and crispy. It should only take 3 to 4 minutes depending on how hot your pan is.
Lay the cooked quesadilla out on a plate or cutting board, and cut into triangles.
Serve with your favorite salsa, taco sauce, lettuce, tomatoes, onions, lime juice and/or sour cream.
