Put the fish in the oven and cook it how you normally would, or if it’s from a package, follow the directions, just don’t over cook it.
While that’s baking, get your toppings ready, wash and chop up or tear apart the cilantro and lettuce (I like to buy my lettuce already shredded for convenience). Wash and chop up the onion and tomatoes, and lay out all your toppings buffet style so everyone can choose what they like.
Warm up your tortillas either in the microwave, stove top or oven and cover them to keep them warm.
Then by the time your fish is done, everything is ready for each one to assemble their own fish tacos.
I preferred topping mine with the fresh tomato, onion, lettuce, cilantro, sour cream, cheddar cheese and a few drops of lime juice…mmmm’mmmm.
