Baked Eggs and Cheese

This is the perfect recipe for using up the bits of ham that are left after a holiday dinner. It's a favorite of my whole extended family!

Ingredients

  • 6 eggs beaten well
  • 6 slices of ham cut in bite size pieces
  • 6 slices of bread cut in bite size pieces
  • 2 cups of skim milk
  • 1 cup sharp cheddar cheese can use a little more if you like it cheesy
  • 1 teaspoon dried minced onion
  • 1 teaspoon yellow mustard
  • salt and pepper to taste I go easy on the salt because the ham is usually so salty

Instructions

  • Beat eggs, and then add milk, mustard and onion. In a separate bowl, combine the ham, bread, cheese and salt and pepper, then spread it in a greased 9×13 casserole dish.
  • Pour the egg and milk mixture over the bread and ham cubes.
  • You can refrigerate for a few hours or overnight to let the eggs soak all through the bread, but even letting it sit for just a few minutes is recommended, to give the liquid a chance to absorb into the bread. Then bake in a 350 degree oven for 50 to 55 minutes.
