Ingredients

  • 1/2 cup butter I like Smart Balance
  • 1/2 cup peanut butter
  • 1/3 cup sugar
  • 1/3 cup packed down brown sugar
  • 1/2 teaspoon baking soda
  • 1 large or extra large egg
  • 1/2 teaspoon vanilla
  • 1 cup flour (if you want to make it even healthier I bet you could substitute
  • whole wheat pastry flour)
  • 1 cup quick rolled oats

Instructions

  • Cream butter and peanut butter with mixer, then add sugars and baking soda. Add egg and vanilla.
  • Stir in flour and oats.
  • Spoon a rounded teaspoonful about 2 inches apart on cookie sheet. I gave mine a quick spray with vegetable oil even though the original recipe says ungreased.
  • Bake for about 8 minutes in a preheated 375 degree oven.
