Crunchy and Chewy Cinnamon Stick Cookies

Chewy cinnamon stick cookies are a delightful treat that pairs perfectly with a cup of coffee. These cookies are similar to biscotti, but with a slightly softer texture that makes them perfect for dunking. The cinnamon flavor is warm and comforting, making these cookies a great choice for a cozy afternoon snack.

Ingredients

  • This recipe makes about 100 cinnamon sticks:
  • 3 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • Sift together these dry ingredients separately.
  • Then in a mixing bowl blend:
  • 1 cup soft butter
  • 1 cup sugar
  • 1 cup brown sugar packed
  • 2 eggs
  • Beat till creamy then add the dry ingredients slowly.
  • Then stir in:
  • 1 cup finely chopped pecans or walnuts

Instructions

  • Line a bread pan with plastic wrap (I ran out, so I used foil).
  • Pour your dough into the bread pan and pat it down. Chill for several hours.
  • After it gets chilled and firm, put it out onto a cutting board and remove wrap.
  • Slice crosswise in 1/4 inch slices and then slice those in 1/4 inch sticks and place on greased cookie sheet 1 inch apart (These do spread).
  • Bake at 325 degrees for 12-13 minutes or till lightly browned.
  • These are absolutely delicious plain, or you can drizzle them with a powdered sugar frosting (Duncan Hines also makes a vanilla frosting that you can drizzle out of a bottle).
