Options: Chopped cilantro, sliced avocado, chopped red onion, diced jalapeno, diced green pepper, crumbled tortilla chips, corn chips or tortilla strips
Instructions
Wash, drain and chop your romaine lettuce and tomatoes.
Drain and rinse the black beans, and drain the corn if using canned corn.
Toss everything, and add any optional ingredients that you like, and you’re ready for the dressing.
There are many zesty dressings available that would work well with this salad (like a Catalina or a vinaigrette based one), but personally I like to mix barbeque sauce with ranch dressing as a topping.
