Cake Mix Confetti Cookies

With just a few simple ingredients, you can turn a basic cake mix into a soft and chewy cookie that is sure to please. One great thing about cake mix cookies is how versatile they are. You can customize your cookies by adding in different mix-ins, such as chocolate chips, nuts, or sprinkles.

Ingredients

  • 1 box vanilla white or yellow cake mix (around 15 – 16 ounces)
  • 2 eggs
  • 1/3 cup vegetable oil or melted butter
  • 1/4 cup + 1 Tablespoon confetti sprinkles save the 1 Tablespoon for after frosting

Instructions

  • Stir together the cake mix, oil and eggs.
  • Lightly stir in the sprinkles.
  • Drop by rounded teaspoonfuls onto a baking sheet covered with parchment paper or lightly sprayed with cooking oil. If you’re doing the right size, this should make 2 dozen cookies.
  • Bake in a preheated 350 degree oven for about 12 minutes or till done.
  • Let cool and then frost. I like to use about 1/2 cup of lightly softened store bought vanilla frosting. I put it in a zip top bag and cut the tip off, and pipe on the frosting.
  • Sprinkle the tops with the remaining sprinkles.
