Ingredients

  • Ingredients:
  • 26 ounce bag frozen shredded hashbrowns
  • 1 teaspoon of salt optional: 1/4 teaspoon pepper
  • One 10 1/2 ounce can cream of chicken soup
  • 2 cups sharp Cheddar cheese
  • 1 Tablespoon dry minced onion
  • 1 3/4 cups french fried onions divided
  • 16 ounces sour cream

Instructions

  • In a large bowl, mix everything together well, except 3/4 cup of the french fried onions.
  • Pour mixture into a greased 9×13 baking dish, and then top the casserole with the reserved 3/4 cup of french fried onions.
  • Bake in a preheated 350 degree oven for 45 minutes.
  • To make this a main dish instead of just a side dish, I like to add 2 cups of ham (cooked and chopped into bite size pieces) to the mixture before baking.
  • Another delicious alternative to topping the casserole with the french fried onions, is to mix 1/2 cup of melted butter and 2 cups crushed cornflakes together, and top the casserole with it before baking, either way is scrumptious!
