Grilled Cheese Breakfast Sandwich

  • 2 slices of your favorite bread
  • Sharp Cheddar or Colby cheese slices
  • 2 eggs microwaved, fried or cooked omelet style
  • 2-3 pieces cooked bacon
  • butter


  • First, cook your bacon.
  • I often buy the pre-cooked bacon so I can just warm it up in the microwave, and blot it with a paper towel.
  • Then you can either cook your eggs in a microwave egg cooker or on the stove, fried or omelet style.
  • Then you’re ready to assemble your sandwich for its final toasting.
  • Spread one side each of two slices of bread with butter, and then layer on your cheese, bacon and eggs with the buttered sides of the bread facing out.
  • Toast over medium heat in your frying pan or panini grill, flipping as necessary till your cheese is all gooey and melted, and the bread is nicely toasted.
