Peanut Butter Rice Crispy Treats

  • 4 Tablespoons unsalted butter
  • 10 ounce bag mini marshmallows
  • 3/4 cup of creamy peanut butter
  • 1 teaspoon vanilla
  • 7 cups rice crispy cereal
  • 1/2 cup mini chocolate chips


  • First, measure out your cereal in a large bowl, so that it’s ready when you’re ready for it.
  • Do the same with your peanut butter and vanilla.
  • Then, in a microwave safe bowl, melt together the butter and marshmallows in 30 second increments, stirring in between till it’s all melted.
  • Then stir in the peanut butter and vanilla, and mix till combined.
  • Pour over the cereal and mix well.
  • Then lightly stir in the chocolate chips
  • (I had to use my hands since the mixture gets thick),
  • but do it gently so the chocolate chips won’t smear around and make your treats ugly.
  • Pat gently into a greased 9×13 pan.
  • Let sit till firm, and if you like, chill for a few minutes in the refrigerator.
  • Cut into bars and serve.
