Crockpot Beef and Sweet Potato Stew

  • 1 1/2 pounds cooked beef roast
  • 3 sweet potatoes
  • 8 small red potatoes
  • 1 red onion
  • 1 28 ounce can of petite diced tomatoes
  • 1 cup frozen green beans
  • 2 Tablespoons Balsamic vinegar
  • 1 Tablespoon Worcestershire sauce
  • 2 teaspoons roasted garlic and herb seasoning
  • 26 ounces beef stock I used unsalted


  • Wash, peel and cut up sweet potatoes in large bite size pieces, and wash and cut up red potatoes and put in crockpot.
  • Peel and dice red onion and add.
  • Pour in tomatoes and beef broth.
  • Add green beans, beef (cut up in bite size pieces), seasoning, Worcestershire sauce and balsamic vinegar.
  • Give it a stir, cover and cook on high for 6 hours. Add salt and pepper to taste.
