Cashew Sesame Noodles

Asian cuisine can seem intimidating at first, but this recipe proves that it doesn't have to be. With the right ingredients, you can whip up a tasty meal that is both healthy and satisfying. The combination of cashews and sesame oil gives these noodles a nice crunch and nutty flavor.

Ingredients

  • 16 ounces angel hair pasta cooked and drained
  • 2 teaspoons of jarred chopped garlic
  • 3 Tablespoons light soy sauce *if vegan, check if your soy sauce has flavoring additives from meat or fish
  • 1 1/2 Tablespoons rice vinegar
  • 1/4 cup Asian sesame oil
  • 1/8 teaspoon red pepper flakes
  • 1 teaspoon sugar
  • 1/2 cup salted roasted cashews
  • 1/3 c water

Instructions

  • Blend all ingredients in blender very well (except pasta). I serve it at room temperature over angel hair pasta or thin spaghetti, and sometimes add chunks of cooked chicken breast. It is supposed to serve 6 – 8, but for us it maybe serves 4!
