This is the perfect recipe for using up the bits of ham that are left after a holiday dinner. It's a favorite of my whole extended family!

Ingredients
6eggsbeaten well
6slicesof ham cut in bite size pieces
6slicesof bread cut in bite size pieces
2cupsof skim milk
1cupsharp cheddar cheesecan use a little more if you like it cheesy
1teaspoondried minced onion
1teaspoonyellow mustard
salt and pepper to tasteI go easy on the salt because the ham is usually so salty
Instructions
Beat eggs, and then add milk, mustard and onion. In a separate bowl, combine the ham, bread, cheese and salt and pepper, then spread it in a greased 9×13 casserole dish.
Pour the egg and milk mixture over the bread and ham cubes.
You can refrigerate for a few hours or overnight to let the eggs soak all through the bread, but even letting it sit for just a few minutes is recommended, to give the liquid a chance to absorb into the bread. Then bake in a 350 degree oven for 50 to 55 minutes.
