Delicious Meatless Spinach Lasagna

This meatless spinach lasagna is a great option for vegetarians or anyone looking to cut down on their meat consumption. It's also a great way to sneak some extra veggies into your diet! It's also delicious!

Ingredients

  • Oven ready lasagna noodles you don’t have to precook them
  • 1 carton of cottage cheese about 16 oz.
  • 1 egg
  • 1 10 oz. package of frozen chopped spinach thaw and squeeze out moisture)
  • 1 tsp. of oregano
  • 1 large jar at least 24 ounces of your favorite pasta sauce
  • 2 cups of mozzarella cheese
  • Parmesan cheese

Instructions

  • Mix cottage cheese, egg, spinach, and oregano.
  • Spray 9×13 pan with cooking spray.
  • Layer 1/3 of the pasta sauce, then lasagna noodles, 1/3 of spinach mixture, and 1/3 of the mozzarella cheese.
  • Repeat this 2 times.
  • You can also sprinkle the top with some Parmesan cheese.
  • Make sure the noodles are covered so they won’t get hard.
  • Tightly cover with aluminum foil and bake for 1 1/4 hours at 350 degrees.
  • The last few minutes you can uncover and let the cheese on top get nice and bubbly.
  • Let it cool and set for at least 10 minutes before serving.
