"Monkey Food"

Ingredients

  • 8 cups of a corn or rice cereal like Crispix or Chex or any generic brand
  • 1 c of chocolate chips
  • 1/2 c of peanut butter I like to throw in an extra spoonful
  • 1/4 c of butter I use a heart healthy kind, but not lowfat
  • 1 tsp. of vanilla
  • 1 1/2 c powdered sugar

Instructions

  • Microwave chocolate, peanut butter and butter till nice and melted and very stir-able (is that a word?).
  • Measure your cereal into a large bowl.
  • Then add the vanilla to the chocolate mixture ( I always forget this step).
  • Pour the chocolate somewhat liquid mixture over the cereal and use a large spoon to gently mix
  • it to coat all the cereal pieces. Then the recipe says to put the powdered sugar into a 2 gallon ziploc bag (which I never seem to have on hand) so I usually divide the sugar into two gallon size bags, and then divide the coated cereal mixture between the two bags. Shake to coat with the powdered sugar.
  • Spread it out on foil or wax paper to cool down, although by now it’s pretty cool.
  • Then store in a ziploc bag or container. The recipe says to store in the refrigerator although it doesn’t last that long at my house!
