Eating gluten free doesn't have to taste like cardboard and be boring. This gluten free banana bread is very delicious!
Ingredients
3Ripe Bananas
1Large Egg
1/4cVegetable Oil
3cGluten Free Baking Mix
1 1/2tspBaking Powder
1/4tspBaking Soda
1/4tspCinnamon
3/4cSugar
Instructions
Blend the bananas, egg and oil in a blender till smooth.
In a separate bowl, mix together all dry ingredients.
Then stir the wet and dry ingredients together.
Pour into a greased 3"H x 5"W x 9"D loaf pan, and bake in a preheated 350 degree oven for 50 minutes (until a toothpick inserted in the middle comes out clean and dry).

**Some brands of baking powder add a starch so be sure to check the ingredients on your brand to make sure it doesn't contain a gluten containing starch like wheat starch.
