When I first got married, (almost 22 years ago) a close friend made this lasagna for my husband and myself. I was not a spinach lover at the time, and was so surprised to really like this lasagna, but I did, and I have made this recipe many many times in the last 2 decades.

Delicious Meatless Spinach Lasagna
- Oven ready lasagna noodles ( you don't have to precook them)
- 1 carton of cottage cheese (about 16 oz.)
- 1 egg
- 1 10 oz. package of frozen chopped spinach, thaw and squeeze out moisture)
- 1 tsp. of oregano
- 1 large jar of your favorite pasta sauce (24 ounces)
- 2 cups of mozzarella cheese
- Parmesan cheese
Directions:
Mix cottage cheese, egg, spinach, and oregano.

Spray 9x13 pan with cooking spray. Layer 1/3 of the pasta sauce,

then lasagna noodles, 1/3 of spinach mixture,

and 1/3 of the mozzarella cheese. Repeat this 2 times.

You can also sprinkle the top with some Parmesan cheese. Make sure the noodles are covered so they won't get hard. Tightly cover with aluminum foil and bake for 1 1/4 hours at 350 degrees. The last few minutes you can uncover and let the cheese on top get nice and bubbly.

Let it cool and set for at least 10 minutes before serving.

Very cool main dish. Oh how I wish I could eat cheese with abandon but it's fun to look the true beauty of lasagna. I love it in my dreams. I did make it with hummus once and it just wasn't the same. That wonderful gooey cheese. . . .
