EASY Carrot Cake Cookies

Did you know that you can make cookies from a cake mix?  One of my favorite cake mixes to use for cookies is a carrot cake mix or a spice cake mix.  They are so easy, quick and of course, delicious, that I had to share them with you!  The carrot cake cookies are so good they don't even need frosting, but if you want to take them over the top, just add some homemade or store bought cream cheese frosting!

EASY Carrot Cake Cookies, Joyful Homemaking

This recipe is as simple as it gets.

INGREDIENTS:

  • 1 box of carrot cake mix
  • 2 eggs
  • 1/2 cup of oil
  • Optional: 1/2 cup of chopped nuts (pecans or walnuts) and/or raisins

Now I did not add nuts or raisins because my kids wouldn't eat them,  but if you like them,  I bet they would be delicious added to the batter.
I mixed it by hand and dropped by tablespoonfuls onto a greased cookie sheet, and then baked at 350 degrees for about 10 minutes.  It makes 24 cookies.

carrot-cake-cookies1After they cooled down, I frosted them with cream cheese frosting. If you like nuts, you could sprinkle some crushed or chopped on top of the frosting for decoration.

carrot cake cookies52The cake mix cookies  have a nice texture, and really your options are limitless. I have even frozen them (baked but unfrosted), and defrosted or microwaved them when I had a craving.

    This looks delicious!! I love Carrot Cake, but my husband thinks it blasphemy to put vegetables in a dessert, so I don't get to eat it very often. 😉
    Have you tried freezing them, or do they not last long enough?! 😉 Maybe I can make myself a batch and freeze the ones I don't eat... 🙂

    Could I add 1/2 cup of grated carrots and the same amt. of raisins to this recipe.....I would like to use a spice cake mix.....
