Nachos

Chicken recipes are pretty much a staple around our house, as are Southwestern recipes. So when you combine the two, it’s pretty much a guaranteed hit for dinner!  I recently found an old notebook with some recipes and meal ideas I had written down over time, and came across this suggestion for rotisserie chicken nachos that was so easy and appealing.

They were so appetizing and simple, and if you’re running short on time, a quick stop at the grocery and everything’s pretty much ready made!

Here’s what you need:
Tortilla chips
Rotisserie chicken
Black beans
Cheddar cheese
Optional:
Tomatoes
Green onions
Jalapenos
Taco seasoning
Salsa
Sour cream
Lettuce

The amount of each ingredient depends on the number of people you’re serving and your preferences.

Take your chicken meat off the bones. If you like, you can toss it in some taco seasoning.

Lay out your tortilla chips on a baking sheet (I used foil for easy clean up).

Layer the chicken and beans (rinsed and drained) on top.

Then add the cheese, tomatoes, onions and jalapenos.
Cover with foil, and bake in a preheated 400 degree oven for 10 minutes.

Depending on your style, you can eat it off the baking sheet or serve it on plates!

    Thanks for the recipe. Made these in less than 10 mins. Will definitely be using rotisserie chicken for my nachos from now on. My husband cleaned his plate.
