Corn Chip Chili Bowl

Jump to Recipe Print Recipe

On a recent episode of 19 Kids and Counting, I saw some dads making dinner for the kids, and they made this quick and easy, sort of fast food, but tasty dish, and I thought, what a fun idea for a quick dinner some night!

Corn Chip Chili Bowl

Here is what you need:
Corn chips
Favorite canned or homemade chili
Lettuce
Tomato
Sour cream
Cheddar cheese

Corn Chip Chili Bowl, Joyful HomemakingI like to keep Hormel 98% fat free turkey chili with beans on hand for making chili dogs or a quick side dish,
and so that was my obvious choice for these chili bowls. No endorsement here, I just like the whole beans
and large turkey portions in it.  Anyway, heat up the chili, and while you're doing that....

Wash and cut up your tomatoes and lettuce.
Then you're ready to layer; start with the corn chips.
Next comes the chili.  Then your preferred toppings, like cheese, lettuce, tomatoes and sour cream.

Any of your favorite Southwestern flavored dressings would work well with this salad, but this is one of our favorites.

Growing up we called them Frito pie and only used, chili, chips, onion and cheese. Out here in California, they are called Frito boats, using pretty much the same ingredients. Your's look yummy and am going to try them out. Reminds me of a deluxe burrito I used to get at a drive in growing up. MMMM...hungry now.
