Easy Turkey Meatloaf

My husband and I really enjoy a good meatloaf, and actually, when I’m making a meatloaf, this is one of the few times I prefer using turkey instead of beef.  In my spaghetti sauces and tacos, although I’ll use either, I prefer beef, but for meatloaf, definitely turkey!  Ground turkey breast just makes a really good tasting meatloaf, and this recipe is perfect in my book.  My husband raves over it!  Putting BBQ sauce on top, instead of the traditional ketchup, just gives it an extra zing of flavor, and if you like, you can substitute the ketchup in the recipe, with the barbecue sauce as well!

Here’s the recipe for this wonderful and easy meatloaf:

INGREDIENTS

  • 1 1/4 pounds lean ground turkey
  • 1 Tablespoon minced dried onion (or 1/2 cup fresh, chopped)
  • 2 teaspoons jarred minced garlic (or 2 to 3 cloves, minced)
  • 1/2 cup plain breadcrumbs
  • 1/4 cup ketchup or barbecue sauce
  • 2 teaspoons Worcestershire sauce
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
    For top:
  • 1/2 cup barbecue sauce (we like Sweet Baby Rays)

This recipe is easy because you don’t have to saute anything (like the onion) first.  For this meatloaf, you just mix everything (except the barbecue sauce) together very well in a large bowl.  Then pat the mixture down into a 6 cup volume (8 1/2 x 4 1/2 x 2 1/2 inch) loaf pan that has been sprayed with cooking oil.  You can spread out the barbecue sauce on top now, before baking, or put in on the top about 10 minutes before the meatloaf is done.  Bake in a preheated 350 degree oven for about 50 to 60 minutes.  Don’t take it out until the internal temperature of the meatloaf reaches at least 165 degrees Fahrenheit (mine took 60 minutes).

It’s important to let your meatloaf sit for 10 minutes after taking it out of the oven, before you slice it, so the juices will redistribute, and you’ll have a nice juicy turkey meatloaf.

  2. I’ve made your recipe several times it’s delicious but I use Italian breadcrumbs instead of plain my roommate likes turkey meatloaf better than the regular meatloaf and craves it now.
