Asian cuisine can seem intimidating at first, but this recipe proves that it doesn't have to be. With the right ingredients, you can whip up a tasty meal that is both healthy and satisfying. The combination of cashews and sesame oil gives these noodles a nice crunch and nutty flavor.
3Tablespoonslight soy sauce*if vegan, check if your soy sauce has flavoring additives from meat or fish
1 1/2Tablespoonsrice vinegar
1/4cupAsian sesame oil
1/8teaspoonred pepper flakes
1teaspoonsugar
1/2cupsalted roasted cashews
1/3cwater
Instructions
Blend all ingredients in blender very well (except pasta). I serve it at room temperature over angel hair pasta or thin spaghetti, and sometimes add chunks of cooked chicken breast. It is supposed to serve 6 – 8, but for us it maybe serves 4!
