Make a Great Breakfast Sandwich

I stumbled across this little kitchen gadget at a yard sale, and picked it up for a quarter.

I hadn’t seen one before, but I figured out it was for microwaving eggs.

It cooks them very quickly, and when they’re done, they’re the perfect round shape to fit in a breakfast sandwich, using an English muffin or biscuit. I have since seen this little gadget at my local grocery store for around $5, so if you’re interested you should be able to find  one at your grocery.  Amazon also sells them in different variations.

We make these little “breakfast sandwiches” at our house, and here is how I do it.

  • First, I bake some reduced fat biscuits and round vegetarian breakfast sausages. (We like Morningstar Farms brand)
  • Then, I cook the eggs in the microwave; it usually takes around a minute, and I check to make sure they’re cooked all the way through.
  • Then we just top the biscuits with eggs, sausage and sliced cheddar cheese, but the delicious options are up to you according to your tastes.

If you can’t get a hold of one of these handy little gadgets, you can also spray a muffin tin with cooking spray, crack one egg in each tin and bake at 350 degrees for about 15 to 20 minutes.
I prefer the microwave gadget because my eggs don’t get crispy around the edges, but it is an alternative, and it still gives you the nice round shape.

  2. We have one of these too! I forget where we even got it from, I think walmart a couple of years ago. It’s nice when you just want to do it quick, or are making something just for yourself and don’t want to dirty a pan.
